Baked Apple with Quark Cream

Warming healthy alternative to warm you up on these cold autumnal nights.

Ingredients:

  • 1 large eating apple
  • 1 tablespoon mincemeat
  • Ground Cinnamon

Quark Cream

  • 1/2 Small pot fat free quark
  • 1 tablespoon fat free fromage frais
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sweetener

Method:

  1. Core the apple, but not all the way through, keep the bottom of the apple intact.
  2. Score around the circumference of the apple, so it will keep its shape whilst cooking.
  3. Spoon the mincemeat into the cored apple, push all the way down to the bottom.
  4.  Place the apple on a baking tray and bake in the oven (180oC) for 25 – 30 minutes, until the apple is cooked through
  5. For the Cream whip the sweetener, vanilla extract, quark and fromage frais together until smooth and fully combined
  6. To serve, spoon the cream over the apple and sprinkle with cinnamon

This is one of my favourite recipes, as its so quick to prepare and gives you those lovely warming comfort flavours you quite often crave for at this time of year.

I used this recipe throughout Christmas last year, in place of the traditional Christmas pudding and really enjoyed the change as well as the 10 1/2lb loss I managed to accumulate during December!

Healthy Chicken, Bacon & Pea Risotto

Serves 4

Ingredients

  • 1 large onion (finely chopped)
  • 2 cloves garlic (crushed)
  • 6 rashers of lean back bacon (all fat removed & cubed)
  • 2 chicken breasts (cubed)
  • 1 cup frozen peas
  • 1 chicken stock cube
  • 2 teaspoons of Italian herbs
  • 1 & 1/2 cups of Orzo pasta
  • 3 cups of boiling water
  • Low calorie spray oil
  • salt and pepper to taste
  • 4 teaspoons of Parmesan cheese

Method

  1. Generously spray a large nonstick pan with spray oil and lightly fry the onion & garlic, until softened (About 2 minutes)
  2. Add the bacon, cooking for about 2 minutes, then add the peas & continue to cook for a further minute.
  3. Add the pasta, chicken, stock cube, water, herbs and seasoning,  stir and cover the pan. Stirring occasionally, gently simmer, on a low heat, until the liquid has absorbed and the chicken and pasta is cooked through. (Approximately 20 minutes)
  4. Serve and sprinkle a teaspoon of Parmesan cheese over each portion.

This versatile recipe is a quick and tasty one pot wonder, that can feed the family within 30 minutes without much preparation. Add other vegetables, meat or fish to create a bit of variation. Depending on who I’m cooking for I quite often add mushrooms peppers and prawns, delicious!
